I’m not fortunate enough to have a lemon tree like this in my yard, and as lemons, like everything else, are getting pricey these days, I buy them a bag at a time from Costco. I use them in baking and in making salad dressings, but still, I can’t seem to use them up fast enough before one of them starts to get moldy and the others follow suit soon after.
So I thought I would try something I had heard a friend tell me about. I cut the lemons in half and used a lemon reamer to get the juice out of them. I poured the juice into an ice cube tray and froze the lemon juice. Now when I need a couple of tablespoons of lemon juice, I just take out one cube from the tray and save myself the trouble of juicing the lemon or worrying about whether it has gone moldy.
Have you ever tried it? Did you run into any problems? Seems to me to be a good way to save the lemon juice before it goes bad. I think I’ve done this before, many years ago, but I haven’t tried it in a while. I’m pretty sure it will work though.

I haven’t tried it myself because I hardly have lemons. But yes, it seems a tried and tested way of doing that works.

I have done that before but not in a while now. Works well as I recall. I used to put the tray in a bag so that the lemon wouldn’t absorb anything from the freezer. Cheers.

It should make it quicker and less work to use them. If you’re in a hurry you can use the microwave to thaw them.

I’ve done that for years with both lemons and limes. After the cubes have frozen, I remove them from the tray and put them in freezer bags. I know I’ve kept them for as long as three months, but I suspect six months wouldn’t be too long.

Yes, I freeze my tomatoes that are getting overripe with no hope of me using them in time. They’re good for anything cooked after that. Better than throwing them away.

That’s a great idea, Anneli. I’ve read about people using ice cube trays for all kinds of little time savers (like cubes of roux or pesto). Another one for the list!

I used one of the cubes for making a salad dressing yesterday and it worked great. A few seconds in the microwave and I was all set. No mess to deal with, ready to go.
